It may be a new year but it’s the same soup season. Whether you’re looking to add more plant-based meals into your repertoire or not, this delicious meal in a bowl may become a new go-to. Kid & nutritionist approved (always nice to know from an expert that it’s packed with nutrients and healthy, beneficial ingredients) - I got this recipe from my good friend @talipinesnutrition who has graciously let me share her recipe with all of you.

Homemade Soup Recipe
Ingredients
- Green lentils
- Garlic (2 cloves)
- Onions (1 chopped)
- Carrots (3-4 chopped)
- Celery (3-4 stalks chopped)
- Leeks (2 chopped)
- 1/4 C tomato paste (if not, tomato sauce is ok in a pinch)
- Salt and pepper to taste
(Cliff notes: you can buy the Trader Joes (or other) mirepoix mix pre chopped to save time)
Directions
- Place 1 C of lentils in a pot, cover with water, and let cook for 15 minutes
- Drain and set aside
- Sauté garlic, onions, chopped carrots, chopped celery in a separate pan and leek until soft
- Add vegetable stock (I like the Trader Joes or Imagine brand - both are vegan & MSG-free)
- Add 1/4 C tomato paste
- Add the vegetables to the lentils
- Cook together, bring to a boil, and let simmer for 20 to 30 minutes
- Season with salt and pepper to taste
- Serve hot and enjoy a delicious homemade soup
Soup companions
- I like to add roasted kale chips that give a little crunch to the soup (roast cleaned and dried kale with a spray of olive oil, and some salt, pepper, garlic powder, and a sprinkle of nutritional yeast at 425 F for 10 minutes appx. until crispy but not brown)
- It is very delicious with fresh sourdough croutons - I like to make mine in the air fryer; take sourdough (or other bread of choice and cut into cubes), spray the fryer basket with olive oil, add cubes, sprinkle salt, give a quick toss, and then cook them for 10 minutes at 380 F
- Also works well with grilled cheese sandwich sticks for kid friendly dipping
