There are many ways to enjoy homemade French fries. Traditional potato, sweet potato or any veggie cut into a “fry” shape. I often prepare by simply oven roasting or air frying with some salt pepper and spices but this recipe was a fun twist I saw in a magazine years ago and became a family favorite and adapted. French Fri Yays - Ingredients
Fries
1 c unseasoned bread crumbs* see below for GF/ lightened alternative
1/2 tsp kosher salt
1/4 tsp freshly ground black pepper
2 eggs, beaten
3 medium zucchini, cut lengthwise into 2-inch-long and 1/4-inch-think pieces (peel first, if desired, and avoid round pattypan squash - the shape does not lend itself to fries
*Tomato Coulis Dipping Sauce
1 pound ripe tomatoes, peeled, cored, and diced
2 tbsp white wine vinegar
1 tbsp honey
1 tbsp minced shallot or onion
2 tsp fresh basil, chopped
Kosher salt and freshly ground black pepper to taste
*Shortcut just use Paesana Tomato Basil Sauce and add some extra basil leaves for garnish (this is my favorite go-to tomato sauce for everything!)
French Fri Yays - Preparation
Combine all the coulis ingredients in a blender and purée
Transfer into a sauté pan and cook over medium heat until fragrant and warmed through, 3-5 minutes
Transfer to the refrigerator to cool
Preheat oven to 375 F or 350 convection
In a medium bowl, combine the bread crumbs, salt, and pepper
Place the beaten eggs in a smaller bowl
Dip the zucchini sticks into the beaten eggs
Roll them in the bread-crumb mixture until they are well covered
Transfer the zucchini pieces to a nonstick baking sheet and bake for about 20 minutes - until the zucchini is tender but the coating is crisps
*Alternatively if you have an air fryer spray the basket and cook for 12 minutes at 390 turning once
Let the fries cool slightly before eating
Serve with the coulis as a dipping sauce
For a short cut I use paseana tomato basil
A gluten free, grain free lighter option for bread crumbs
Ingredients
1 c almond flour
1 tbsp paprika
1/8 tsp turmeric
1 tsp salt
A tbsp of mixed dried herbs: oregano, basil, parsley, garlic powder, and onion powder
